You can make this one with blueberries, strawberries, blackberries or peaches- but there's something about some fresh raspberries and prosecco that go together like hand in glove.
Take a pint of sweet, fresh raspberries and mash them with good quality honey to taste,
dash of brandy and a pinch of sugar.
Pour into your glasses and top with some Italian Prosecco.
Float a berry or two on top with a sprig of mint
1/2 oz Chambord
1/4 oz simple syrup
1/4 oz fresh lime juice
3/4 oz fresh lemon juice
Place all ingredients in a shaker with ice. Shake to chill. Strain into a martini glass
Simple Syrup: Combine 1 cup water and 1 cup sugar in a saucepan. Heat and stir until it comes to a boil. Boil for two minutes. Take off the heat and store in a plastic or glass container at room temperature.
This mixture will last about 2 months. If you want to extend that period, you can add 2 ozs of Vodka per pint of simple syrup to the recipe.
