Sweet Potato Polenta
1 cup Water 1 Cup Milk
1/2 Cup Yellow Cornmeal
1/2 Cup Baked Sweet Potato
a few tablespoons heavy cream
salt and white pepper to taste
1 Tbl unsalted butter to finish
Bake sweet potato rubbed with olive oil, wrapped in foil in oven at 350 degrees until soft. Take skin off and mash with cream, salt and pepper until smooth. You can also put the sweet potato's and cream in a food processor and blend until smooth
In a saucepan, over medium heat, bring the water and milk to a boil. Slowly stir in the polenta. Cook, stirring constantly, for 15 minutes. Add the sweet potato. Stir in a little more cream for a smooth and creamy texture. Season with salt and pepper. Taste to make sure you have a creamy texture not gritty. Remove from the heat, add butter and serve immediately.
